Skinny Moscow Mule Cocktail

A few years back my husband told me about this drink he had served in a special copper mug called a Moscow Mule. I’m sure many of you have already heard of this vodka based cocktail made with ginger beer and lime.

Save calories by making your own ginger syrup to mix with seltzer and vodka for a nice cocktail with about 40% less calories than a traditional Moscow Mule made with ginger beer.

 

When I tried it I loved the flavor and though we didn’t have the special copper mugs we often enjoyed this refreshing drink especially in the summertime.

The only problem I find is that there are a lot of calories in the gingerbeer, and diet gingerale just didn’t cut it.

So I went on a quest to try to make something that was similar but with fewer calories. I made my own ginger syrup. It’s really easy. Pared with lemon-lime flavored seltzer water, and came up with a suitable lower calorie drink. I can’t wait to make it at the beach.

 

Skinny Moscow Mule Cocktail
Ingredients
  • 1.5 oz Vodka
  • 1.5 oz Ginger syrup
  • Lemon Lime Seltzer water
  • ½ lime
  • Ice
Instructions
  1. Place equal parts vodka and ginger syrup in a glass.
  2. Squeeze the juice of half a lime in and add the lime wedge.
  3. Fill with ice.
  4. Top off with lemon/lime seltzer water.
Notes
My shot glass was 1.5 oz. but you can vary this to your liking.
You can use a citrus flavored vodka in this too.
Make ginger syrup by simmering 1 cup water with 1 cup sugar adding in about ½ - 1 cup fresh sliced and peeled ginger root. Simmer 20-30 minutes on low heat. Strain and cool.
