Everyone loves the slow cooker because it makes our life easier. One of my “go-to”recipes is a slow cooker pot roast  with root vegetables, that is hearty and so satisfying, you won’t believe how easy it is to make.

Way back before crockpots were super popular, a friend of mine shared one of her family’s favorite meals called, ‘Busy Day Pot Roast.” This was made in a large oven roasting pan on low heat, so that at the end of the day, you could easily get dinner on the table will minimal effort.

I think originally she only used potatoes, onions and carrots, as the base, but I like to add other root vegetables like parsnips and turnips. Of course, you can switch it up any way you like. You can even add mushrooms, tomatoes and peppers.

Top it off with a package of Lipton’s french onion soup mix and you are good to go.

A little green salad for color and you have a delicious meal the whole family will love.

Slow Cooker Pot Roast Recipe with Root Vegetables

Serves: 6-8

Ingredients
  • 1 pound mixed bite sized potatoes, or 3 large russet potatoes washed and cut into 2 inch pieces
  • 3 carrots, peeled and cut into 2 inch pieces
  • 2 parsnips peeled and cut into 2 inch pieces
  • 2 turnips peeled and cut in quarters
  • 1 large onion cut into large pieces
  • 1 -2 pounds chuck roast
  • 1 envelope of Lipton's French Onion Soup Mix
Instructions
  1. Place all vegetables in the bottom of the slow cooker.
  2. Next place the roast on top.
  3. Spread the Lipton's soup mix on top of the roast
  4. Cook on low for 6-8 hours.
  5. Serve immediately
