Lemon and Garlic Roasted Chicken

Lemon and Garlic Roasted Chicken with Potatoes
  • Chicken parts
  • 2-3 lemons
  • ½ cup Extra Virgin Olive Oil
  • 5-6 large cloves garlic - crushed
  • 4 large potatoes peeled and cubed
  1. Preheat oven to 375 degrees
  2. In a large bowl mix olive oil, garlic, lemon juice.
  3. Add salt and pepper.
  4. Add chicken and toss until well coated.
  5. Remove chicken from the oil mixture and place in a large baking pan.
  6. Toss the potatoes in the oil mixture.
  7. Remove potatoes and place in and around the chicken.
  8. Pour remaining oil overtop.
  9. Bake for 1.5 hours uncovered until the chicken and potatoes are nicely browned.
  10. Serves 4
