Have you tried my granola recipe? I really love eating it with vanilla yogurt in the morning, or better yet, vanilla ice cream in the evening.
It’s a great source of fiber with oats, nuts and dried cranberries. I would eat it everyday if I had the time so I thought, I really need to make a granola bar that I can eat on the go.
I went in search of granola bar recipes to find out what I might need to make my granola recipe into a bar. So many of the recipes I found were similar to mine. Two ideas seemed to stick out. The amount of honey I use is only 2 tablespoons, and the recipes I looked at for bars seemed to have more, so I doubled it to 1/4 cup. The other difference was that many people baked the granola.
So I tried making bars by starting with my favorite granola recipe with the additional honey. I spread it into a 8 x 12 inch glass pan which I coated with cooking spray. I covered it with a piece of waxed paper and placed another smaller pan on top to evenly press the granola into the pan. You can also just use your hands.
I removed the top pan and waxed paper and baked it for 20 minutes at 350 degrees and let it cool. The granola was still too soft at this point so I put it back in the oven for another 25 minutes until it started to look a little browned on the edges. Cooking it longer definitely did the trick. I may even consider cutting back on the honey again. Once it was cool I was able to cut it into bars, which totaled 12 for this recipe.
